Tomato Basil Pasta

This is a really yummy and really quick way to make a simple meal when you’re busy.

You’ll need:

Pasta- one box

whole cherry tomatoes- one medium container

basil- about one large handful

parmesan cheese- up to you (I use feta too)

garlic- up to you I used 3 cloves (depends on how much garlic you like)

olive oil- 4 tablespoons

2 tablespoons butter

salt and pepper

I also red chili flakes for some heat


Start by boiling a pot of water with salt for the pasta.  While that is boiling add the cherry tomatoes to a skillet on medium high heat with olive oil, salt pepper and whole cloves of garlic.

Mix the tomatoes around the pan until they are tender and the skins just begin to break or pop.  Once they reach that point take the pan off the heat and set aside.

Put the pasta in the boiling water with the lid off.  The pasta must breath while it is cooking.  Have a strainer in the sink on standby.

In the mean time chop the basil and grate the parmesan cheese, set aside.

Once the pasta is cooked (see your pasta cooking directions), strain and put the pasta back into the empty pot.  Add the two tablespoons butter, cheese, basil, tomatoes salt and pepper to taste. Gently mix around and serve!

I added some of my favorite feta cheese as garnish at the end.  The color looks great and I love the taste
