Got the munchies? I’ve got you covered. I really don’t enjoy eating late anymore….However there are some special occasions where I love to enjoy myself and cook something scrumptious. There is nothing that can comfort me more than a delicious plate of pasta. I was so hungry around 10pm. I was feeling extremely lazy and didn’t want anything too big. So I rummaged through my pantry and voila! Pasta it is! The pasta I chose are these amazing linguini noodles. However they are already dried in separate nests for individual servings. Perfect! I absolutely love this because when I just eat one I feel full in my tummy and my craving for comfort is satisfied. Not to mention Im not over stuffed. I made a sauce of olive oil, butter garlic and diced tomatoes. I sautéed the tomatoes until they were basically a sauce with the oil, garlic, and butter. Tossed in cooked pasta topped with parmesan and fresh basil from my garden. Recipe is to taste. But here are approximations for one serving.
One pasta linguini wheel
One clove garlic
1 Teaspoon red pepper flakes (Optional, if you like spicy)
2 Tablespoons butter
2 Tablespoons olive oil
As much Parmesan as you want!
Small handful of fresh basil (I truly recommend fresh bail if you have access to it. It makes all the difference in flavor).
Use medium/large sauté pan and heat olive oil and butter over medium heat.
Meanwhile, mince garlic, add to pan.
Chop tomato, add to pan.
Add salt pepper and red pepper flakes to taste.
Cook the tomato mixture for roughly 10 minute or until it has transformed into a light sauce. Stirring regularly.
While cooking sauce, cook pasta, strain and set aside.
Once sauce is ready, turn off the stove, add the strained pasta to the pan with the sauce. Toss until coated.
Plate and add Parmesan and Basil!
