Ok, so summer is still here. And I am savoring every moment. Including eating corn on the cob every chance I get. I found a recipe on Pinterest. However, I tweaked it to my personal taste buds. Its tangy, salty, sweet, a little spicy, and not to mention fresh. OMG you’re going to love it! We ate it for dinner last night and that was it. So delicious. It’s very messy, so be sure to have napkins around. You will be licking your fingers after this one.
I made this recipe for two people, but you can multiply it for however many people are in your home!
2 ears of corn
salt and pepper to taste
2 tablespoons butter
1 teaspoon paprika
1 teaspoon chili powder
1 lime cut in half
cilantro or parsley about 1/2 c chopped
White Mexican cheese, Queso Blanco (the crumbly kind, it comes in a circular shape) about 1/2 cup
Bring water to a boil in a pot
Clean the ears of corn, take the husks off etc.
Once water is boiling place corn into pot, boil for approximately 6-8 minutes
Once corn is cooked, remove and set on a workable surface (be careful they will be very hot)
Cut corn in half or keep them whole ( we like them in smaller pieces ).
Squeeze lime all over corn
Divide butter equally amongst the corn and let it melt on top, rub it all over the corn
Add salt, pepper, paprika and chili powder equally over corn
Adhere the cheese to the top of the corn and add the cilantro or parsley to top
